Smoked Salmon & Microwave Eggs

Ingredients
2 eggs 2 teaspoons chopped fresh chives 1 toasted multigrain English muffin 25g sliced smoked salmon
Method
Step 1: Crack eggs and place into a 12.5cm/4.9inch microwave container with air lid. Break eggs into container. Add chives and 2 tablespoons cold water. Whisk together. Cover with lid and open vent. Step 2: 
Microwave on high for 30 seconds. Stir with a fork. Place lid back on and microwave for another 10 seconds or until almost set. Stir. Close vent and stand for 1 minute. Step 3: Place the scrambled egg on top of the English muffin and serve. Recipe: Superfood Ideas, July 2008. Kim Coverdale.
