Baby rocket leaves, to serve
Step 1: Beat eggs and 2 tablespoons cold water in a bowl until combined. Season with salt and pepper. Preheat grill on high.
Step 2: Heat a medium frying pan over heat and cover it with olive oil.
Step 3: Beat eggs again and pour into pan. Tilt the pan so that the eggs cover the base. Fold the omelette over itself by dragging the cooked egg from the outer edge into the centre.
Step 4: Place the pan under the grill and grill until lightly brown. Serve with baby rocket leaves or herbs. Enjoy!
