Mediterranean Style Baked Fish


4 x 150g or 5 ounces white fish fillets 2 cloves garlic, crushed ½ cup pitted black olives 4 tomatoes, cut into quarters lengthways ¾ cup white wine 4 medium potatoes, chopped 2 cups green beans, trimmed Handful fresh basil, roughly torn


Step 1. Preheat oven to 180°C/350° Cut 4 pieces of foil, big enough to wrap around fish. Place each fillet into foil, top with garlic, olives, tomatoes, and wine. Seal by twisting foil together so no air escapes. Bake for 20 minutes. Step 2. Meanwhile, boil potatoes and steam green beans. Step 3. Turn out all ingredients from foil onto serving plates. Sprinkle with basil and serve with potatoes and beans. &nbsp;
