2 Sweet Potatoes/yams, peeled and cut into small cubes
1 large bag Fresh Spinach
Step 1: Preheat oven to 350C/660F. Line a tray with baking paper and spray oil.
Step 2: Peel and cube sweet potato cutting into small cubes. Place on the baking tray and cook in the oven for approximately 25-30 minutes until tender, turning once.
Step 3: Meanwhile, in a large non-stick fry-pan over medium-high heat, wilt the spinach until it is soft. Drain the extra water from the spinach.
Step 4: Place roasted sweet potato and wilted spinach on plate and microwave until steaming hot (approx. 1 minute, 30 seconds but microwaves will vary).
Step 5: Spray pan and crack egg into pan. Cover the pan and cook until the egg whites have set. Remove from the pan and place on top of the spinach and potatoes. Add chipotle tobacco sauce if you wish. Enjoy!
