Spinach & Tomato Frittata

3 egg whites

1 egg yolk

100g frozen spinach, chopped

1 tomato, chopped

1 clove minced garlic

spices (thyme, rosemary, sage, white pepper)


1. Preheat oven 180°.

2. Beat egg with spices in a bowl.

3. Put spinach & tomatoes in a mini soufflé/quiche pan. Pour egg mix over spinach & tomatoes.

4. Bake 30–35mins or until eggs not runny, depends on how many veggies you use.
