1⁄4 cup coriander leaves, finely chopped
1⁄4 cup parsley leaves, finely chopped
1 clove garlic, crushed
1 tsp smoked paprika
1 tsp ground cumin
2 tsp lemon rind, finely grated
1 cup Greek yoghurt
1. Place all ingredients, except the chicken, in a bowl, mix to combine.
2. Thread chicken pieces onto each skewer & coat generously in the spiced yoghurt. Set aside for 10mins to marinate.
3. Preheat grill on high. Place skewers on a wire rack on a baking tray & grill 6-7 mins each side or until golden & cooked through.
