8 slices Fruit and Nut Loaf
4 fresh figs
150g goat's cheese
Honey, to drizzle
Step 1: Preheat a grill to medium-high. Line a baking tray with foil. Toast the loaf slices on the tray under the grill until golden. Set aside.
Step 2: Cut each fig into four slices and place on the tray. Sprinkle with a little brown sugar if desired. Cook under the grill for 3-4 minutes.
Step 3: Spread the goat’s cheese over the fruit toast. Drizzle with a little honey and top with fig slices. Top with a few small sprigs of lemon thyme if desired.
