200g (2 cups) organic rolled oats
50g (1 3/4 oz) flaked or desiccated coconut
60g (2 oz.) macadamia nut oil or pressed coconut oil (melted)
60g (2 oz) honey or organice maple syrup
1 organic egg
100g (3 1/2 oz) 70% dark chocolate
Step 1: Preheat your oven to 150C/ 300F.
Step 2: Combine oats, coconut, oil or melted butter, honey and egg into a mixing bowl.
Step 3: Mix through with your hands for a few minutes. Squishing the ingredients together until the cookie starts to come together. Chop up the chocolate into chunks and mix through the oats.
Step 4: Form into 12 cookies and line them up on a baking tray.
Step 5: Bake for approximately 20 minutes or until golden. Remove and enjoy.
