Dark Chocolate & Avocado Truffles

1 medium avocado, ripe

10 oz/280g dark chocolate chips (try for 70% organic dark chocolate)

2 tablespoons cocoa powder


Step 1: Cut avocado in half and scoop out flesh. Place in bowl. Mash until there are no chunks, using a fork or electric hand mixer/food processor.

Step 2: Take 1/2 cup of chocolate chips and roughly chop into small bits. Set aside. Melt the rest of the chocolate chips in a microwave safe bowl. (i.e. in 10 second bursts, stirring in between to make sure it doesn’t burn).

Step 3: Scoop avocado mixture into the bowl with melted chocolate and mix until well-blended. Stir in the chocolate chip bits.

Step 4: Refrigerate the chocolate-avocado mixture for an hour.

Step 5: Scoop out 1 tablespoon of the mixture and roll into a ball using your palms. Repeat with the rest of the mixture.

Step 6: With the cocoa powder on a separate plate, roll the balls into the cocoa powder until completely covered. Enjoy!
