Ingredients

Greens broccoli/broccolini/beans/snowpeas/bokchoy

1 med sweet potato, cooked, mashed

Lean Mince (turkey/chicken/beef)

1 med white/brown onion

Shallots

Chilli

Mushrooms

Ginger

Garlic

Fresh lemon & lime juice pepper (to taste)

All seasoning (to taste)

1 tomato, crushed

Method

1. Dice & steam greens & mushrooms. Place in oven dish.

2. Brown onion in a non-stick pan. Add shallots, chilli, ginger, garlic & juice.

3. Add mince, cook until browned, add spices & tomato. Once cooked, spoon onto greens.

4. Spread mash on top, then a fine layer of cottage cheese.

5. Grill in oven approx 10mins, it doesn’t need long as everything is already cooked! 🙂
