Cottage Cheese Omelette

1 quantity Basic omelette (See “Basic Omelette” recipe) 1 tablespoon chopped fresh mint leaves 1/2 cup frozen peas 1/3 cup (65g) cottage cheese
Step 1: Follow steps 1, 2 and 3 of Basic omelette (see related recipe), adding mint with water. Step 2: Cook peas in a saucepan of boiling water for 2 minutes. Drain. Sprinkle the peas over the omelette. Dollop cottage cheese on the omelette. Step 3: Place the pan under the grill and cook until set. Cut the omelette in half and serve. Recipe: Super Food Ideas.
