Ingredients

100g chicken breast

Sweet Potato/Japanese Pumpkin

Zucchini, peeled, cut in strips (or use Spiralizer/Veggie Twister)

Handful mushrooms

Chilli

Garlic

Fresh basil

Extra virgin olive oil

Method

Method 180° 45mins

1. Roast sweet potatoes/pumpkin in the oven at 180° for 45mins.

2. Brown chicken, chilli, garlic & fresh basil in olive oil.

3. Add mushrooms, pumpkin & zucchini. Stir fry it all with a little more olive oil and a sprinkle of nuts at the end.
