Chicken, Carrot & Zucchini Rissoles/Patties

500g Chicken Mince

1 egg, lightly beaten

1 small carrot

1/2 red onion, grated

1 zucchini, grated

2 tsp ginger (optional)

Juice of 1 lemon (optional)

Coconut oil (1/2cm in large pan)


1. Combine all ingredients in bowl. Using heaped tablespoons, roll mixture into small rissoles/patties.

2. Heat oil in a large non-stick pan.

3. Cook in batches, turning frequently for 6-8mins or until cooked through.
