Broccoli & Cheese Muffins

Ingredients

4 eggs

1 cup steamed broccoli or defrosted broccoli if it was frozen

1/2 cup sharp cheddar, shredded

Sea salt and pepper to taste

Method

Step 1: Preheat oven to 375C/700F. Spray a muffin tin with oil.

Step 2: Chop broccoli. Whist broccoli together with the eggs and add sea salt and pepper if desired.

Step 3: Pour egg mixture into 6 muffin tins. Divide cheese between them.

Step 4: Bake for 12-15 minutes, or until the eggs are set.
