2 medium bananas (approx. ¾ cup) mashed.
1 cup of quick cook rolled oats
¼ cup dried currants
Step 1: Preheat oven to 350F/175C. Cover a baking tray with baking paper and spray it with oil.
Step 2: Combine the mashed bananas and oats in a bowl. Fold in the dried currants.
Step 3: Drop the cookies on to the baking tray and bake for 10-12 minutes or until golden brown.
