1/2 cup creamed corn
sour cream and fresh dill sprigs, to serve
Step 1: Place eggwhites* and corn in a bowl. Season with pepper. Beat lightly with a fork until just combined.
Step 2: Cover a large frying pan with olive oil and heat over medium-high heat. Pour half the egg mixture into the pan ensuring it covers the base of the pan. Cook for 2 minutes until the egg is almost set.
Step 3: Place pan under grill. Grill until lightly browned. Slide omelette onto plate. Cover to keep warm. Repeat with the remaining mixture.
Step 4: Top each omlette with sour cream and dill. Serve.
*Tip: The egg white is high in protein (around 4g of protein per egg white) and low in calories. While egg yolk is also high in protein, vitamin A, D and phosphorous, iron and zinc; it is also high in dietary cholesterol. Egg whites are a good option if you wish to reduce your dietary cholesterol intake for the week.
